What does grass-fed mean?
At our store, we offer top quality Aberdeen Angus meat from Uruguay that is 100% pure grass-fed and certified free from antibiotics, hormones, and animal by-products. Our cows are free-range year-round and only fed natural grass and grass-like foods, such as alfalfa, that they would naturally eat in the fields.
The term "grass-fed" may sound obvious, but it actually refers to a specific type of beef. While most cows in the US start their lives eating grass, they are typically moved to barns to fatten up on grains before being slaughtered. As a result, the vast majority of cows in the modern food system do not eat grass for their whole lives.
By offering 100% grass-fed beef, we ensure that our customers are getting the highest quality, most natural beef available.
How does grass-fed beef compare to grain-fed beef?
Uruguay is well-known for its grass-fed beef production, and our farming practices reflect this commitment to high-quality, sustainable, and ethical beef production. Our Angus cattle are raised on lush pastures, where they graze on natural grasses, herbs, and legumes. This type of diet not only provides a natural and nutrient-rich diet for the animals but also creates a unique flavor profile in the beef.
Compared to grain-fed beef, grass-fed beef tends to have less marbling but more distinct flavor and tenderness due to the animal's natural diet and lifestyle. The lower marbling in grass-fed beef means that it has a lower fat content and is considered a healthier alternative. Our Aberdeen Angus herd has been specifically bred to be well-suited for grass-fed production, with a moderate frame size and the ability to efficiently convert grass into high-quality beef.
What is Uruguayan Prime Steak?
Each country has its own way of grading beef, or determining what consists of high-quality beef and how to measure it. In Japan, for example, wagyu is graded on a BMS scale from 1-12 and is ultimately graded A1-A5 through C1-C5. In America, most steaks fall into one of three USDA categories: Select, Choice, and Prime with Prime being the highest quality and highest amount of marbling.
Most of the Prime steak today is what we would consider lower Prime. We weren’t satisfied with just “slightly” abundant marbling and wanted to find an Angus program that was something we would consider truly high-quality American beef.
We went to work finding a partner that not only provided the upper echelon on Prime beef, but also met our high standards of care, and we found them. Our partner is arguably the best and most consistent Black Angus cattle producer in Uruguay with the purest genetics around. Packed with beefy taste, this is the most tender, succulent, and juicy Black Angus you can get.
With only about 2,000 head available each year and very high demand, their steaks can be found only at the best luxury steakhouses in the country - you likely won't find them at your local grocery store or butcher
We offer the traditional cuts of ribeye's, strips, and filets, as well as more unique butcher cuts in this program to satisfy any grilling desire. We are also proud to offer Uruguayan Prime Dry-Aged steaks as part of this program.
If you consider yourself a fan of a traditional American steak, Uruguayan Prime is as traditional as it gets. These steaks are thicker cut and have more of a classic beef texture than our wagyu offerings and certainly isn't lacking for marbling or flavor, but it's a program that is more beef-forward than fat-forward, so it won't melt in your mouth quite like wagyu and you’ll taste meat not grains. We personally love both, but there's a time and place for each, and sometimes you just want a beefy, juicy Uruguayan Prime steak.
What is Aberdeen Angus?
Aberdeen Angus is a breed of cattle that originated in Scotland and is known for its superior quality of beef. In Uruguay, our herd has been bred over many years to revert to the traits of the original Aberdeen Angus. Our Aberdeen Angus herds have been adapted to local landscapes and conditions over time.
Unlike modern Angus, which typically has a bigger frame and has been bred to grow faster with the help of cereals, our original Aberdeen Angus has a more moderate frame size, which is better suited for the type of regenerative grazing systems we use in Uruguay. The smaller animals require less fodder, which makes it easier for them to feed on grass only. Moreover, their body weight provides just the right amount of pressure from hooves to the ground, gently incorporating plant residues into the topsoil.
In summary, our Aberdeen Angus herd in Uruguay is bred to be better suited for the local conditions and regenerative grazing systems, resulting in high-quality beef with unique characteristics.
What benefits do I get from eating grass-fed beef?
All beef is nutritious, but grass-fed beef is significantly more nutritious than grain-fed beef. One of the unique benefits of grass-fed beef is that it contains conjugated linoleic acid, a type of fat that may help prevent weight gain. In contrast, grain-fed beef has none.
Additionally, grass-fed beef has better fat quality, with significantly more anti-inflammatory Omega-3 fats and significantly fewer inflammatory Omega-6 fats. While the absolute amount of both types of fat is relatively low, this can still be a significant health benefit.
Grass-fed beef also contains much more vitamin K2, an important nutrient for heart and bone health. Vitamin K2 helps get calcium into your bones, where it's needed, and keeps it out of your arteries, where it can contribute to plaque buildup and increase the risk of heart attacks. Finally, grass-fed beef contains more antioxidants, especially vitamin E, which may help protect against disease and support overall health.
What is grass-fed marbling?
Grass-fed marbling refers to the amount of intramuscular fat in meat from cattle that have been raised on a grass-based diet. When cattle are allowed to graze freely and eat a natural diet of grass and other vegetation, they develop a unique flavor profile and tend to have less marbling than grain-fed cattle. However, grass-fed marbling can still provide a delicious and healthy alternative to grain-fed meat.
Do you sell the same quality of food products as a local supermarket?
We pride ourselves on offering the most natural cuts of beef. This means that we only offer meat that we know and trust in terms of its origin, process, and quality. By carefully minding and controlling every step of the process from the farm to your table, we can ensure that you get the most natural and highest quality beef that combines beneficial health properties with a fantastic flavor.
It's important to note that supermarkets can be deceiving. We've learned that anyone can call their beef "grass-fed," and they may even omit the fact that the beef is grain-finished. These claims are not regulated by the USDA. However, all of our beef is grass-fed, grass-finished, and USDA certified. And you know what? In Uruguay, the use of antibiotics and hormones for growth is forbidden by law. All of our cuts are NEVER certified, meaning that the animals never received antibiotics, hormones, or proteins of animal origin.
The final size of my steak is slightly smaller/larger than advertised
Some of our pieces are hand-cut products, so they might weigh slightly more or less than your original order. Please note that this is part of the challenge of offering natural, grass-fed products that are free of antibiotics and hormones.
How do I know how much to order?
An average consumer will eat between 6oz-12oz of beef.
How do I defrost the beef?
Properly defrost the beef, and the flavor will be great. The best way to thaw beef is in the refrigerator. DO NOT thaw beef at room temperature. Place it on a tray inside the refrigerator and let it thaw for 12 hours. Thicker pieces may require longer defrosting times. If you need it sooner, you can thaw the vacuum-sealed bag in cold water for around 45 minutes.
Should I freeze the beef as soon as I get home?
You can store the beef in your refrigerator for 3-4 days, making sure it stays between 30 and 34 ºF. However, if you won't be consuming it within the next few days, we recommend freezing it.
Frozen beef can stay fresh for about 6 months, while vacuum-sealed beef can last up to 2 or 3 years. Please note that over time, freezers can drain the flavor out of food. Our recommendation is not to exceed 6 months of storage.
My beef arrived thawed out
Deliveries that do not depend directly on our team (for example, deliveries outside our delivery area where we use partners such as UPS, FedEx, USPS, etc.) may take longer than expected. However, this is usually acceptable.
Thawed steaks and chops may be refrozen as long as they have been refrigerated and have not been thawed for longer than one day. Sometimes, the vacuum package may leak while the product is thawing due to small pinholes that can occur during freezing and/or shipping. As long as the product remained frozen and was refrigerated while thawing, this is not a cause for concern.
What is vacuum packaging?
Vacuum packaging is a type of Modified Atmosphere Packaging that alters the atmosphere surrounding the food to help preserve it for a longer period of time. The meat is placed in a food-safe bag and then put into a vacuum machine where the air is removed, creating a vacuum inside the chamber. Once the desired pressure is reached, the vacuum is released, and two heated bars seal the bag shut. While there are some effects of using Cryovac packaging, such as a darker red color and sweating, these are outweighed by the benefits. When the meat is removed from the packaging and exposed to oxygen again, it will return to its usual red color. To eliminate any lingering smells, rinse the bag out and dispose of it properly after use.
